Hey friend.
A little backstory, I'm currently a Chef de Partie at a Golf Club. As it is still the dreaded winter season, the course is closed but the restaurant is open- hence, this is our slow season. A time to make desserts I'd like to say!
Normally, we're incredibly busy and there's no time or space to make desserts in-house so now's a perfect time and I'm definitely doing my best to make the most of it.
Shoutout to my boss, Chef Johnson for letting me do this and supporting my ideas, even when they seem too ridiculous or random sometimes.
I've been having so much fun creating these desserts and am so thankful to have peers that support me in lots of taste-testing!
So without further ado, this series is all about those experimented desserts that made it to our menu!
Up first,
EGGNOG CHEESECAKE
for the Christmas season!
Couldn't find biscuits so I made what we had in-house and GUESS WHAT- it became the best cheesecake base ever! 2 WORDS: WAFFLE CONES! I'm officially making this a baking pro tip! Add some oreo crumbs to that and makes it even better.
I've had this baked cheesecake recipe since I was 16 years old. It has been the base of every baked cheesecake I made since then. So versatile, simple, and delicious.
The eggnog flavour in this was subtle which was what I was aiming for.
It's not my favourite flavour to make but glad it turned out pretty good!
