MANGO COCONUT RICE PUDDING WITH TOASTED COCONUT FLAKES
A very simple and quick vegan dessert I made for the President's dinner buffet.
The rice pudding was so comfortingly creamy and tasty, it complimented the slightly tart mango layer on top. Added a dash of salt to the rice pudding which made all the difference. It just brought that *ooomphf* flavour that I was looking for, if that makes sense?
The mangoes I got were quite tart so I cooked them with mango puree, sugar, and coconut milk to overlap the tartness.
Topped it with toasted coconut flakes and it turned out great!
